Mary Berry's Chocolate Chip Shortbread!

Hey everyone,

As you will all probably know, I have a huge soft spot for baking, in particular shortbread. So, today I thought I'd share with you Mary Berry's recipe for chocolate chip shortbread!

Ingredients (makes 16-18):

3 inch round cutter

75g of Semolina or Ground Rice
140g of Plain Flour (plus extra for dusting)
75g of Light Muscovado Sugar
25g of Cocoa Powder
175g of Butter (at room temperature and cut into cubes)
100g of plain Dark Chocolate Chips

Put the semolina in a large bowl with the flour, sugar and cocoa powder. Add the butter and rub in with your fingertips. Work the dough together with your hands, stir in the chocolate chips, then press into a dough until it forms a smooth, round ball.

Roll out the dough on a lightly floured surface to 5mm thickness. Using the 3 inch cutter, cut the dough into cookies, then gather up the trimmings, re-roll and cut out more.

Lay the cookies on 2 large baking sheets. Chill until firm (it will be roughly 30 minutes). Meanwhile, preheat the oven to 160 C/140 C fan/325 F/Gam Mark 3.

Bake for 20-25 minutes or until the cookies start to look very slightly darker at the edges. Remove from the oven and leave on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
