As well as baking, I'm a huge fan of cooking so this is my recipe for chicken turnovers that I cannot get enough of!

Ingredients (makes 4):
I packet of puff pastry (or make your own)
2 chicken breasts (not cooked)
1 tin of condensed chicken soup
1 tin of sweetcorn
1 onion
1 pepper
1 egg to glaze

Set the oven to 200 C/Gas 6.

Cut the chicken, onion and pepper and place with the chicken in a bowl. Give it a good mix and add in the condensed chicken soup.

Flour your surface and the pastry. Cut into 4. Roll each quarter top to about the thickness of a 2p.

Cover 2 baking trays with greaseproof paper and place 2 turnovers on each tray. Fill with 2 spoons of filling and seal with egg and a fork to crimp around the edges. Glaze the top of each with egg and bake for 20 minutes or until golden brown.

I did my first cooking post not long ago, and you guys seemed to really enjoy it so I thought I'd share with you a recipe from Tanya Bakes!


Ingredients - makes 4 small pizzas:

500g spelt flour
1 teaspoon salt
1 jar tomato sauce
pizza toppings of your choice - e.g. mozzarella, olives, salami, ham, pineapple, roasted vegetables, rocket, etc.

Mix the flour, 300ml cold water and salt in s food processor to form a dough.

Switch on the grill to a high setting. Put a non-stick frying pan over a high heat on the hob.

Divide the dough into four pieces and roll out each piece on a floured surface to form a circle.

Transfer one base to the frying pan. Fry on one side for 3 minutes, then flip it over and fry for another 3 minutes. While it's frying on it's second side, spread a few tablespoons of tomato sauce over the top and add toppings.

To finish, grill the pizza for 2-3 minutes, until the cheese has melted and your toppings have warmed through.

Repeat with the remaining dough, or refrigerate to use later. If serving the pizzas together, keep the cooked ones warm in the bottom of the oven, covered loosely in tin foil, until all are prepared.

I never really talk about cooking on here, I tend to just ramble on about baking so today I thought I'd do something a little different!

*Little side note - This recipe is very interchangeable, you can swap and change to put anything in that you want. If you've got any questions, just ask in the comments!*

Ingredients:

1 tbsp. oil
1 onion
150g long grain or risotto rice
1 vegetable/chicken stock cube in 550ml of boiling water
250g sweetcorn
100g chorizo
2 chicken breasts

Heat oil in a pan over a medium heat ; add onion and chicken and fry until onion is soft.

Stir in the rice. Add the stock, sweetcorn and chorizo.

Simmer for 15 minutes, until rice is tender.

That's it! It's really easy!
