Mini Chocolate Cookies
I saw this recipe for mini chocolate cookies whilst flicking through Tanya Bakes and I couldn't not share it with you all!
Ingredients (Makes 20-25):
200g unsalted butter, softened
300g caster sugar1 large egg
325g self-raising flour
100g milk choc chips
1 jar of chocolate spread, chilled
Preheat the oven to 180 c/350 f/gas mark 4. Line two baking trays with greaseproof paper.
In a bowl, cream together butter and sugar until light and fluffy. Add the egg and mix, then add the flour and chocolate chips and combine to form a dough.
Place a small ball of dough in your hand - around 2.5cm in diameter. Poke a hole in the middle and spoon in a little chocolate spread - this is easier if the spread has been chilled. Cover the hole with another little bit of dough, then place on a baking tray and press down slightly. Repeat with the rest of the dough, making sure to leave enough room between each cookie as they will spread in the oven.
Bake for 8-10 minutes, until golden. Transfer onto a wire rack to cool!
